Hyperspectral imaging, as an emerging technology, acquires and analyzes a large amount of spectral and spatial information from a real scene in the form of three-dimensional images. The technology offers unprecedented capabilities, compared to conventional imaging and spectroscopy, for a wide range of applications from satellite remote sensing to biomedical imaging and to product quality and safety inspection. Image processing and analysis is thus at the core of the technology.

Based on the integration of computer vision and spectrscopy techniques, hyperspectral imaging is a novel technology for obtaining both spatial and spectral information on a product.

Hyperspectral Imaging Technology in Food and Agriculture

Over the past decade, hyperspectral imaging has been rapidly developing and widely used as an emerging scientific tool in nondestructive fruit and vegetable quality assessment. Hyperspectral imaging technique integrates both the imaging and spectroscopic techniques into one system, and it can acquire a set of monochromatic images at almost continuous hundreds of thousands of wavelengths. This chapter presents a detailed overview of the introduction, latest developments and applications of hyperspectral imaging in the nondestructive assessment of fruits and vegetables. Additionally, the principal components, basic theories, and corresponding processing and analytical methods are also reported in this chapter. In recent years, consumer demand for fruits and vegetables tends to be diversified, and more attention has been paid to the external quality of apples. Consequently, the accurate, rapid, and objective assessment system in the processing stage is essential to ensure the quality of fruits and vegetables during processing operations.

Crop monitoring for nutrients, water-stress, disease, insect attack and overall plant health is a vital aspect of successful agricultural operations. Traditionally this has been carried out by visual examination of crops on the ground or sometimes from the air. However these methods are limited by the ability of the human eye to discriminate between healthy foliage and foliage suffering various kinds of stress. Often a specific condition must be well-advanced before visual symptoms become noticeable even to experienced observers. Modern precision agriculture relies on site-specific management tactics to maximize yield and resources while reducing environmental impacts such as over-fertilization and the broad applications of pesticides. Pin-pointing areas requiring attention — be it water, weed or pathogen treatment, or nutrient adjustments — allows for spot application rather than whole-field treatment. The collection of key data at a sufficient level of accuracy depends on the availability of equipment that can be operated at a cost-effective level.
