Europe's insatiable demand for spices in the late Middle Ages AD is a remarkable example of dramatic historic change triggered by consumer preference. I must admit that, at the outset, the prospect of reviewing yet another book on the history of spices was not particularly alluring. There are reasons of course why food has all of a sudden become flavour of the month, in history, as in interdisciplinary studies. Why this is so has as much to do with long term trends and, not surprisingly, latent or deeply embedded prejudices within the discipline of history.
